Happy, Happy Monday and holiday weekend!!! Today, I thought I’d share a few of B and I’s fave summer cocktails!! We both love trying new cocktails and have tried our best to get these recipes perfect over time!! One tip: We absolutely LOVE to support local small businesses and have found that using craft/local alcohol to taste best. Try these out and let us know what you think!!! Pineapple Mojito
INGREDIENTS
12 fresh mint leaves
2 teaspoons sugar
1 lime, quartered
Ice cubes
1/2 cup pineapple rum
1/2 cup club soda
INSTRUCTIONS
Divide the mint, sugar, and lime wedges among 4 old-fashioned glasses.
Using a pestle (from a mortar and pestle) or the end of a wooden spoon, mash the mint, sugar, and lime together.
Add some ice and top off with pineappple rum, and club soda.
Canadian Mule
INGREDIENTS
2 ounces Canadian whisky
4 ounces Ginger Beer, well chilled
½ to 1 ounce fresh lime juice depending on your taste
ice (not crushed)
INSTRUCTIONS
Pour the whisky and lime juice into a copper mug or tall glass, and stir well.
Add ice and a lime wedge.
Top with Ginger Beer.
Cucumber Mint Fizz
INGREDIENTS
2 oz Gin
0.75 oz Lime Juice
1 sugar cube
Fresh Sliced Cucumber
Fresh mint leaves
Club Soda
INSTRUCTIONS
In a pint glass, combine cucumber, two mint leaves pulled from the stem and the gin.
Muddle until leaves start to break up.
Fill glass to the rim with ice. Add the lime juice, sugar cube, and top with club soda.
Stir with a spoon until well chilled.
